1 tbsp  Olive Oil
Streaky Bacon Rashers , finely chopped
Onions , finely chopped
Carrots , trimmed & finely chopped
Celery Sticks , finely chopped
Garlic Cloves , finely chopped
Sprigs Fresh Rosemary , leaves picked & finely chopped
500 g  Beef Mince (20% fat)
800 g  Plum Tomatoes , tinned
20 g  Fresh Basil Leaves , 75% finely chopped and the rest left whole for garnish
1 tsp  Dried Oregano
Bay Leaves
2 tbsp  Tomato Purée
Oxo Beef Stock Cubes
Red Chilli Peppers , deseeded and finely chopped (optional)
125 ml  Red Wine
Red Cherry Tomatoes , sliced in half
For Seasoning & Serving
75 g  Parmesan Cheese , plus extra to serve
400 g  Spaghetti
Crusty Bread , to serve (optional)
