750 g  Sweet Potatoes
100 g  Quinoa , soaked in cold water for 10 minutes, and drained
400 g  Chopped Tomatoes , tinned
600 ml  Vegetable Stock
400 g  Black Beans , tin, rinsed and drained
Coriander , small bunch, to serve
Sour Cream , to serve (optional)
